Chicken Sweetcorn Soup

A classic.  Yet somehow, I have no idea how to make it the traditional way, and I never bothered to try to learn.  So this is my version, one where I combine all of my favourite healing and healthy ingredients, and also some noodle, because everything tastes better with a bit of pasta.


Chicken Sweetcorn_Ingredients-INGREDIENTS-

1 Whole Skinless Chicken

1 Large Onion

1 Large Carrot

3 Ears of Corn

1 Cup Broken Vermicelli


-RECIPE-

1) Roughly chop the large onion and carrot.

2) Place the chicken, chopped onions and carrot into a large stockpot.  Season with salt and cover with 2 litres of water.  Bring to a boil and turn the heat down to simmer for 30 minutes.

4) Strain the broth.

5) Cut the kernels off the corn, and add into the broth along with the carrot and onions.  Blitz until smooth.

5) With two forks, strip the chicken meat.

6) Add the shredded chicken and broken vermicelli into the stockpot, cover and let sit for 5 minutes.  Serve up.
